Potato and leek soup

This is my go to soup recipe. It is simple and comforting, and the recipe is difficult to get wrong. You can adjust the ratio of ingredients to your liking, and it will still turn out great. (Just be careful with the nutmeg powder.)
Slightly browning the potatoes and leeks adds a lot of depth of flavour to the soup. You can also switch out the oil with butter for richer flavour.
Garnishing with fresh cream is also a good option while serving.
