Chocolate & orange brownie

Ingredients

Serves: 8-10

75g Dutch cocoa powder 150g Butter 150g Sugar 3 Eggs 90g All-purpose flour 1/4 tsp Salt From 2 oranges Orange zest 50g (optional) Chopped walnuts or chocolate chips

Method

Preheat oven to 175C (350F). Line an 8-inch square tin or a small rectangular baking dish with parchment.

Take room temperature butter (or melt it in a microwave or in a saucepan over low heat) and whisk in the sugar and cocoa powder while the butter is still warm.

Add the eggs to the batter and whisk until well mixed.

Add the orange zest and mix.

Fold the flour and salt into the chocolate mixture just until no dry streaks remain. Stir in walnuts or chocolate chips, if using.

Pour the batter into the lined tin and smooth the top.

Bake for 30-40 minutes (lower end for a more fudgy brownie, and higher end for a more crumbly one).

Cool before slicing and serving.
